Yaban Kolektif Karasakız ‘Çavuşlu’ 2021

Made from the 35 year old Karasakız vines grown in our own vineyard in the village of Çavuşlu in the Bayramiç district of Çanakkale, the northern Aegean. The dry-farmed vines planted on sandy clay and granite soils are gobelet trained.

Alcohol: 13.6% / 75cl

pH: 3.35  TA: 6.15 g/l (Tartaric) RS: 2.4 gr/lt

Winemaking:

Hand-harvested Karasakız grapes were destemmed and fermented in a stainless steel tank with a 2 ton capacity. Total maceration time was 11 days.

Upon the completion of the malolactic fermentation, the wine was racked into clay amphoras of 500-liter capacity where it was aged for 7 months. The wine was bottled after a light filtration on the 30th of August and spent another 6 months in bottle in the underground caves of the Vinolus Winery.
